Crawfish Macaroni and Cheese

Creamy Crawfish Mac and Cheese

Adults and kids’ will quickly gobble up this simple cheesy, creamy mac and cheese with crawfish. Even better and creamier than out of the box. An easy mac and cheese that’s healthy and with crawfish tails – doesn’t get better than that.  This Mac and Cheese recipe is adapted from my new cookbook, Guy’s Guide To Eating Well:  A Man’s Cookbook for Health and Wellness!

Makes 10 (2/3-cup) servings

8 ounces small macaroni
2 tablespoons cornstarch
2 cups skim milk
6 slices reduced-fat American cheese
1 cup shredded reduced-fat Cheddar cheese
Salt and pepper to taste
1 cup Louisiana crawfish tails, rinsed and drained

1. Cook macaroni according to package directions. Drain well and set aside.
2. In large nonstick pot, mix cornstarch and milk and bring to a boil. Lower heat, stirring, and cook until thickened, about 5 minutes.
3. Reduce heat and add American cheese and Cheddar cheese, stirring until melted. Add macaroni and crawfish; mixing well. Season to taste.
