Crawfish Squash Fritters

1 egg

1 sm. onion, chopped

1/4 c. flour

 1/4 c. self-rising corn meal

1/2 lb. crawfish tails, chopped

1/2 c. buttermilk

2 c. cooked squash

1/2 t. salt

Combine all ingredients and mix well. Drop by teaspoon into hot oil. Fry until golden brown. Serve immediately.
